MandÌ_ with 15% Garnacha Tintorera grown at 600 metres. 4 hectares of 20 year-old MandÌ_ plantings massale-selected from Parotet. 30% whole bunch, 12 days maceration with fermentation in stainless, then 6 months lees-ageing in 2600 litre 'mud jars'. A slow, mild and gentle elaboration facilitates a fluid, lively, electric MandÌ_. It translates as 'saffron', the suggestion being its savoury light-palate perfectly suits rich, spicy, aromatic foods. The wine totally belies the notion that wine from the south of Spain might be affected by warmth. Utterly delicate, acid-fresh and agile, it is a wine of bright red berry fruit with a herbal edge, a touch of spice, a waft of sage-balsam and fennel pollen with a lick of clay. The tannin is delicate and chalky and at 12.5% a/b the overall effect is super-light and totally savoury.
