TSA has had eyes open for this grape for\na very long 􀆟me, and has tasted hundreds of flabby, uninteres􀆟ng Bobals\n– Rosalia’s is the first to ever cap􀆟vate us!\nRosalia's vineyards are cer􀆟fied organic, she uses only natural fer􀆟lisers,\npromo􀆟ng biodiversity by welcoming chickens, sheep and pigs from local farms to roam the\nvineyards freely. Grapes are hand harvested and vinified as naturally as possible with na􀆟ve yeasts\nand li􀆩le other interven􀆟on. In the cellar, both modern\/interna􀆟onal and tradi􀆟onal local prac􀆟ses\nare implemented- Damajuanas, Tinajas, Stainless Steel and Oak. For now, we will work with Rosalia’s\nexcellent entry level Bobal, ‘Mil Historias’.
